Good Food News - The Billion Oyster Project

This Food52 story highlights The Billion Oyster Project, a New York City-based initiative that is taking the oyster shells that restaurants may see as refuse and using them to renew and stabilize New York’s waterways.
The shells are kept out of a landfill and sent to New York Harbor to anchor new reefs, to stabilize the waterways, and restore balance in the watery environment. The Billion Oyster Project also educates students and New Yorkers about the importance of the water that surrounds the island of Manhattan.
Much like our past guest Peter Stein and his company Peeko Oysters out on Long Island, they are bringing these bivalves back to the area and bringing cleaner water back to the harbors.
