Good Food News - Time to Dig Inn
Fast Company has written a hopeful article about an East Coast restaurant, Dig Inn, that is showcasing their “farm to counter” sensibilities. The eatery has 15 locations, with more to follow, and are starting to get more and more of the produce they use from local farmers.
They have even gone so far as to lease their own land. This gives them a chance to really experiment with the items they can have on their menu, know how easy or hard they are for the farmers they contract with to grow, and getter a better, literally dirt deep understanding of the needs of the farms it works with. Working with these smaller farms is an approach that could help bring more young people "into the craft and trade of agriculture.” Producing positive results if you ask me.
